- Oversee and manage the daily operations of the Stewarding department.
- Supervise, assign and monitor the performance of Stewarding team members.
- Ensure the cleanliness and hygiene of kitchens, dishwashing areas, F&B back-of-house and related facilities.
- Ensure sufficient clean and sanitized china, glassware, cutlery, kitchen utensils and equipment are available for daily operations.
- Monitor dishwashing, cleaning and sanitation procedures in accordance with hotel standards and HACCP requirements.
- Control the use, storage and replenishment of cleaning chemicals, supplies and Stewarding equipment.
- Inspect dishwashing machines, sinks, garbage areas and other Stewarding facilities; report and follow up on maintenance issues with Engineering.
- Monitor breakage, loss and proper handling of operating equipment and take corrective action when required.
- Control Stewarding inventory and minimize unnecessary consumption and wastage.
- Ensure proper waste collection, segregation and disposal in accordance with hotel procedures and sustainability standards.
- Prepare duty rosters and allocate manpower according to business levels and operational requirements.
- Monitor attendance, productivity, grooming and performance of Stewarding team members.
- Train, coach and develop team members on cleaning procedures, chemical handling, hygiene, safety and proper equipment use.
- Coordinate closely with Executive Chef, F&B Manager, Restaurant Managers, Engineering and other departments to ensure smooth operations.
- Ensure compliance with food safety, hygiene, health, safety, fire and environmental requirements.
- Support internal and external audits, inspections and corrective action plans.
- Conduct daily briefings and ensure effective shift handovers and communication.
- Maintain a clean, safe and organized Stewarding work environment at all times.
- Prepare operational reports and perform other duties as assigned by Management.

- Diploma or Vocational Certificate in Hotel Management, Hospitality, Food & Beverage or a related field is preferred.
- Minimum 3 years of experience in Stewarding or Kitchen Operations, with supervisory experience in a hotel/resort environment.
- Previous experience in an international hotel/resort is an advantage.
- Strong knowledge of Stewarding operations, dishwashing, cleaning procedures, kitchen hygiene and food safety standards.
- Good knowledge of HACCP, chemical handling, sanitation and workplace safety procedures.
- Good leadership and team supervision skills with the ability to train and motivate team members.
- Good communication and interpersonal skills with effective coordination across departments.
- Strong organizational, planning, problem-solving and decision-making skills.
- Basic knowledge of inventory, equipment and cost control.
- Good command of English; additional languages are an advantage.
- Proficient in Microsoft Office and familiar with hotel operational systems.
- Detail-oriented with a strong focus on cleanliness, hygiene and quality.
- Positive, proactive, responsible and professional attitude.
